  • 2 cups smoked cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente (7-8 minutes). Drain and set aside.
  2. In a saucepan over medium heat, melt the butter. Whisk in the flour to create a roux, cooking for 2-3 minutes.
  3. Gradually add whole milk while whisking until smooth. Stir in smoked cheddar until melted and creamy; mix in smoked paprika.
  4. Fold cooked macaroni into the cheese sauce until fully coated.
  5. Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish and top with panko breadcrumbs.
  6. Bake for 25-30 minutes until bubbly and golden brown.
