  • 2 lbs beef short ribs
  • 1 lb chorizo sausage (spicy or mild)
  • 1 large sweet onion, chopped
  • 4 garlic cloves, minced
  • 28 oz fire-roasted canned tomatoes
  • 1 can (15 oz) black or kidney beans, drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 4 cups low-sodium chicken broth
  • Fresh cilantro, for garnish
  • Juice of 1 lime

Instructions

  1. Chop the onion and mince garlic; set aside.
  2. In a large pot over medium-high heat, brown the short ribs on all sides until golden.
  3. Stir in chorizo, onions, and garlic until fragrant.
  4. Add fire-roasted tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  5. Pour in chicken broth. Bring to a boil then reduce heat to simmer for about 1.5 hours.
  6. Near the end of cooking time, stir in drained beans and heat through.
