  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 8 small tortillas (flour or corn)
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss diced sweet potatoes with olive oil, cumin, paprika, garlic powder, salt, and pepper until well-coated.
  3. Spread sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown.
  4. Warm tortillas in a skillet or over an open flame.
  5. Assemble tacos by layering roasted sweet potatoes and black beans on each tortilla. Squeeze fresh lime juice over the top.
  6. Add sliced avocado and fresh cilantro before serving.
