  • 3/4 cup granulated sugar (divided)
  • 1/4 teaspoon baking powder
  • 1/2 cup unsalted cold butter
  • 1 large egg
  • 2 cups fresh strawberries (chopped)
  • 2 cups rhubarb stalks (chopped)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, 1/2 cup sugar, and baking powder. Set aside.
  3. In another bowl, combine chopped strawberries and rhubarb with remaining sugar; let sit for 10 minutes.
  4. Cream together cold butter with the flour mixture until crumbly. Add egg and mix well.
  5. Press half of the mixture into the bottom of the prepared dish.
  6. Spread the fruit mixture evenly over the crust, then crumble remaining dough on top.
  7. Bake for 35-40 minutes until golden brown. Cool before slicing.
