  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red curry paste
  • 200g fresh ramen noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup spinach
  • 200g chicken or tofu, cubed
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Boil water in a large pot over medium heat. Add ramen noodles and cook until tender (3-4 minutes). Drain and set aside.
  2. In the same pot, heat oil over medium heat. Sauté diced onions and minced garlic until fragrant.
  3. Stir in red curry paste, coconut milk, and vegetable broth. Simmer gently to combine flavors.
  4. Add sliced bell peppers, carrots, and protein of choice. Cook for an additional 5-7 minutes until everything is tender.
  5. Remove from heat and stir in lime juice and chopped cilantro (if using).
  6. Serve hot in bowls, garnished with extra cilantro or lime wedges.
