  • 10 egg roll wrappers
  • 1 cup black beans (canned, rinsed)
  • 1 cup frozen corn (no thawing needed)
  • 1 cup diced bell peppers (any color)
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 green onions (chopped)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, mix black beans, frozen corn, bell peppers, cheddar cheese, green onions, cumin, and chili powder until well combined.
  2. On a clean surface, place an egg roll wrapper with one corner facing you. Spoon two tablespoons of filling onto the center. Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner and seal edges with water.
  3. Heat vegetable oil in a deep skillet or pot to medium-high until shimmering.
  4. Fry 3-4 egg rolls at a time for 2-3 minutes on each side until golden brown. Use tongs to turn them for even cooking.
  5. Remove from oil and drain on paper towels. Serve warm with salsa or guacamole.
