  • 1 lb smoked sausage (kielbasa or Andouille)
  • 2 lbs Yukon Gold potatoes, diced
  • 1 cup bell peppers, sliced
  • 1 medium sweet onion, chopped
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Chop smoked sausage into bite-sized pieces. Dice potatoes and slice bell peppers and onion.
  3. In a large bowl, combine sausage, potatoes, bell peppers, onion, garlic, olive oil, salt, pepper, paprika, and Italian herbs. Toss well.
