  • 2 lbs ripe tomatoes, halved
  • 1 medium onion, quartered
  • 4 cloves garlic, unpeeled
  • 3 cups low-sodium vegetable broth
  • 1/4 cup extra virgin olive oil
  • 1 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved tomatoes cut side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Add quartered onions and unpeeled garlic cloves to the baking sheet.
  4. Roast in the oven for 30-35 minutes until tomatoes are blistered.
  5. Allow to cool slightly, then blend roasted vegetables with vegetable broth until smooth.
  6. Stir in chopped basil and adjust seasoning before serving hot.
