  • 8 oz fettuccine or linguine
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil or parsley, chopped
  • ½ tsp red pepper flakes
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Cook pasta: In a large pot of salted boiling water, cook pasta until al dente per package instructions. Drain and reserve 1 cup of pasta water.
  2. 2. Sauté shrimp: In a skillet over medium heat, add olive oil. Season shrimp with salt and pepper and sauté until pink and opaque (about 3-4 minutes). Remove from skillet.
  3. 3. Create sauce: In the same skillet, lower the heat and add minced garlic; sauté for 30 seconds until fragrant. Pour in heavy cream, stirring to combine.
  4. 4. Add cheese: Gradually whisk in Parmesan cheese until melted and smooth. Stir in red pepper flakes, salt, and pepper to taste.
  5. 5. Combine: Return shrimp to the skillet along with the cooked pasta. Slowly add reserved pasta water until reaching desired creaminess.
  6. 6. Garnish & serve: Fold in fresh herbs and serve immediately with extra Parmesan on top.
