  • 1 cup sausage (pork or turkey)
  • 1 cup bell peppers (mixed red and green), chopped

  • 2 tbsp olive oil

  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes; season with salt and pepper. Cook until golden brown and crispy (10-12 minutes).
  2. Stir in sausage and onions; sauté until browned (5-7 minutes). Add bell peppers and cook until tender (about 5 minutes).
  3. Create wells in the hash for each egg. Crack an egg into each well; cover and cook until whites are set but yolks remain runny (approximately 5 minutes).
  4. Sprinkle shredded cheese over the top during the last minute of cooking. Serve hot, garnished with fresh herbs if desired.
