  • 1 lb ground beef
  • 1 lb ground pork
  • 2 cups cooked rice
  • 1/2 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 3 green onions, chopped (for garnish)
  • 1 cup pineapple chunks (optional)
  • 1 cup seasoned breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. In a large bowl, combine ground meats, breadcrumbs, minced garlic, soy sauce, and half of the honey. Mix well.
  3. Form small meatballs about 1 inch in diameter and arrange them in the greased baking dish.
  4. In another bowl, mix remaining honey with soy sauce and optional pineapple chunks. Pour over the meatballs.
  5. Evenly distribute cooked rice around the meatballs. Cover with foil and bake for 25 minutes until heated through.
  6. Remove from oven, sprinkle with green onions, and let cool slightly before serving.
