  • 1 lb boneless, skinless chicken thighs
  • 4 Hatch green chiles, roasted and peeled
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 tbsp cumin powder
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Dice the onion and mince the garlic. Roast Hatch chiles over an open flame until charred; peel off skins.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add minced garlic and cumin powder; stir for 30 seconds until fragrant.
  4. Add chicken thighs and cover with chicken broth. Bring to a gentle boil.
  5. Stir in roasted chiles and lime juice; simmer on low heat for 30 minutes until chicken is cooked through.
