Grilled lemongrass chicken is a delightful dish that transports you to a tropical paradise with every bite. Succulent chicken breasts are marinated in a vibrant blend of fresh lemongrass, garlic, ginger, and soy sauce, then grilled to perfection.   • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 stalks fresh lemongrass, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • Juice of 1 lime
  • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, combine the chopped lemongrass, ginger, minced garlic, soy sauce, brown sugar, and lime juice. Whisk until blended.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes (preferably longer).
  3. Preheat your grill to medium-high heat (about 400°F or 200°C).
  4. Remove chicken from the marinade and place it on the grill. Cook for about 6-8 minutes per side until internal temperature reaches 165°F (74°C).
  5. Brush reserved marinade over the chicken during the last few minutes of grilling.
  6. Allow chicken to rest for 5 minutes before slicing and serving.
