  • 1 ripe avocado (about 150g)
  • 1 cup sharp cheddar cheese, shredded
  • 2 tbsp unsalted butter
  • Pinch of salt and pepper (to taste)

Instructions

  1. Prep your ingredients: Slice the bread and mash the avocado in a bowl until smooth.
  2. Butter each slice of bread on one side.
  3. On the unbuttered side of one slice, layer mashed avocado and shredded cheese. Season with salt and pepper, then top with another slice of bread (buttered side out).
  4. Preheat your skillet over medium heat and place the sandwich in the skillet.
