  • 1 lb ground beef or turkey
  • 1 packet (1 oz) taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup diced tomatoes (canned)
  • 1 cup chopped bell peppers (mixed colors)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth

Instructions

  1. In a large skillet over medium heat, sauté chopped onion and minced garlic in oil until translucent (3-4 minutes).
  2. Add ground meat and cook until browned (5-7 minutes), breaking it apart as it cooks.
  3. Stir in chopped bell peppers, taco seasoning, and diced tomatoes; simmer for 2-3 minutes.
  4. Add rinsed rice and chicken broth; bring to a boil. Reduce heat to low, cover, and cook for 15-20 minutes until rice is tender.
  5. Remove from heat, sprinkle cheese on top, cover again until melted (about 5 minutes).
