  • 1 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp brown sugar
  • 1 tsp mustard (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Sauté chopped onion in a skillet over medium heat until translucent; add minced garlic until fragrant.
  3. In a large bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, egg, oregano, salt, pepper, and optional mustard; mix gently.
  4. Shape the mixture into a loaf in the prepared baking pan.
  5. In a small bowl, whisk together balsamic vinegar, ketchup, and brown sugar; drizzle half over the meatloaf before baking.
  6. Bake for 45-55 minutes until cooked through; brush remaining glaze on during the last 15 minutes for a glossy finish.
