  • 1 lb lean ground beef
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 1/4 cup balsamic vinegar
  • 1/2 cup chopped onion (sautéed)
  • 2 cloves garlic (minced)
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup (divided)
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, breadcrumbs, egg, sautéed onions, garlic, parsley, salt, and pepper until well combined.
  3. In another bowl, whisk together balsamic vinegar, half of the ketchup, brown sugar, salt, and pepper to create the glaze.
  4. Shape the meat mixture into a loaf on a parchment-lined baking sheet.
  5. Brush half of the glaze over the meatloaf before baking.
  6. Bake for about 60 minutes or until internal temperature reaches 160°F (70°C).
  7. Let rest for 10 minutes before slicing and drizzle with remaining glaze.
