  • ½ cup unsweetened cocoa powder
  • ½ cup unsalted butter, melted
  • 24 oz (3 packages) full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp pure vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, pureed
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, cocoa powder, and melted butter; press firmly into a springform pan.
  2. Melt chocolate chips in a microwave-safe bowl. Set aside to cool slightly.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually mix in sugar and sour cream until well combined.
  4. Add vanilla extract and eggs one at a time; mix until just incorporated.
  5. Blend fresh strawberries with a bit of sugar until smooth but leave some texture.
  6. Pour half of the cream cheese mixture over the crust; drizzle half of the strawberry puree on top and swirl with a knife. Repeat with remaining layers.
  7. Bake for 50-60 minutes or until edges are set but the center slightly jiggles. Cool completely before refrigerating for at least four hours.
