  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup sweet corn (fresh or frozen)
  • 2 tsp chili powder
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Layer black beans, corn, diced bell pepper, onion, minced garlic, and chili powder on top.
  3. Pour in the chicken broth until ingredients are submerged.
  4. Squeeze lime juice over everything.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Shred the chicken with two forks directly in the slow cooker and mix everything together.
