  • 2 tbsp curry powder
  • 1 cup full-fat coconut milk
  • 1 large onion, chopped
  • 4 cloves garlic, crushed
  • 1 inch fresh ginger, grated
  • 1 cup bell peppers (red or yellow), chopped
  • 2 scallions, chopped
  • 2 sprigs fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Cut chicken thighs into bite-sized pieces and combine with curry powder, salt, pepper, garlic, and ginger in a bowl. Let marinate while prepping other ingredients.
  2. Heat oil in a large skillet over medium heat. Add chopped onions and cook until translucent.
  3. Add marinated chicken to the skillet and brown on all sides for about 5–7 minutes.
  4. Stir in coconut milk and bell peppers; bring to a simmer. Cook for about 20 minutes until chicken is tender.
  5. Taste and adjust salt or pepper as needed before serving.
