  • 1 lb lean ground beef
  • 1 cup frozen or canned sweet corn
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 2 cups crushed tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Salt to taste

Instructions

  1. In a skillet over medium heat, sauté chopped onion and minced garlic until fragrant.
  2. Add ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  3. Transfer the beef mixture to a slow cooker and add corn, black beans, diced tomatoes, crushed tortilla chips, chili powder, cumin, and salt.
  4. Cook on low for 6 hours or high for 3 hours.
  5. About 15 minutes before serving, sprinkle shredded cheese over the top and cover until melted.
  6. Serve hot with optional garnishes such as cilantro or avocado.
