  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados, diced
  • 1 cup bell peppers (mixed colors), diced
  • 1 medium yellow onion, diced
  • 4 large flour tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with cumin, chili powder, salt, and pepper. Heat oil in a skillet over medium heat and cook chicken for 6-7 minutes per side until golden brown. Remove from skillet and let rest.
  2. In the same skillet, sauté onions and bell peppers until softened, about 5 minutes.
  3. Shred or chop the cooked chicken into bite-sized pieces. In a bowl, mix chicken with diced avocados, sautéed veggies, lime juice, and cilantro.
  4. Warm tortillas in the microwave or on another skillet for about 30 seconds until pliable.
  5. Assemble burritos by placing filling on one side of each tortilla and rolling tightly.
  6. Serve with lime wedges or salsa on the side and enjoy every delicious bite!
