  • 1 lb ground beef (80/20)
  • 2 cups fresh Brussels sprouts, halved
  • 1 cup plain or Italian seasoned breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 large egg
  • 1 jar (24 oz) tomato sauce
  • 2 tsp Italian seasoning
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, garlic powder, egg, salt, and pepper. Mix until just combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Toss halved Brussels sprouts in olive oil, salt, and pepper on a separate baking sheet.
  5. Bake both sheets in the oven for about 25 minutes or until meatballs reach an internal temperature of 160°F (70°C) and Brussels sprouts are crispy.
  6. In a saucepan over medium heat, warm the tomato sauce with Italian seasoning. Gently toss baked meatballs in the sauce before serving over roasted Brussels sprouts.
