  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • ½ cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust for spice level)
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut salmon fillets into uniform bite-sized pieces.
  3. Set up a breading station: one bowl for beaten eggs, another for panko breadcrumbs seasoned with salt and pepper.
  4. Dip each salmon piece in the egg, then coat with breadcrumbs.
