  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes with juices
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 cups kale or spinach (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrots, and celery for about 5 minutes until softened.
  2. Add minced garlic, thyme, and rosemary; cook for another minute until fragrant.
