  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 large sweet onions, sliced
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, shredded
  • 2 tbsp butter
  • 1 cup low-sodium chicken broth
  • 2 tsp fresh thyme leaves
  • ½ cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to about ½ inch thick for even cooking.
  2. In a skillet over medium heat, melt butter and sauté sliced onions for about 15 minutes until golden brown.
  3. Add minced garlic and thyme; cook for an additional 2–3 minutes until fragrant.
  4. In a bowl, mix caramelized onion mixture with Gruyère cheese; season lightly with salt and pepper.
