  • 1 cup long-grain white or brown rice
  • 1 cup tzatziki sauce (homemade or store-bought)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In the prepared dish, combine uncooked rice with water (or broth) and half of the tzatziki sauce; stir well.
  3. Place seasoned chicken breasts on top of the rice mixture. Drizzle with olive oil and sprinkle garlic powder, oregano, salt, and pepper over the chicken.
  4. Cover tightly with aluminum foil and bake for about 45 minutes until chicken reaches an internal temperature of 165°F (75°C) and rice absorbs liquid.
  5. Remove foil, spread remaining tzatziki over baked chicken, and bake uncovered for an additional 10 minutes. Garnish with fresh herbs if desired before serving.
