  • 1 lb pre-cooked seafood mix (shrimp, crab, scallops)
  • 4 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup frozen peas and carrots
  • 2 sheets puff pastry (store-bought)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups chicken or seafood stock (low-sodium)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt the butter. Add diced onion and minced garlic; sauté until soft and translucent.
  3. Stir in flour for about 2 minutes until golden brown to create a roux.
  4. Gradually add chicken or seafood stock followed by heavy cream. Stir until thickened.
  5. Fold in the seafood mix, peas, carrots, Cajun seasoning, salt, and pepper. Remove from heat.
  6. Roll out puff pastry on a floured surface. Cut larger circles if desired or use one sheet to cover the top.
  7. Pour filling into a greased baking dish; cover with puff pastry and seal edges. Cut slits for steam release.
  8. Bake for 25–30 minutes until golden brown.
